- Preheat oven to 180°C.
- Place ½ mozzarella, 2 basil leaves and ¼ tomato on each escalope. Add salt and pepper, roll it and fix with the toothpick.
- Sprinkle with Parmesan and bake 20 mins.
- Taste with a drizzle of olive oil.
